Chickpea Peanut Butter Chocolate Chunk Cookies

To make the whole bag, you'll need:

  • 1 bag Beanie Bites
  • 1 mashed banana or 1/2 cup applesauce
  • 1/3 cup peanut butter
  • 1/3 cup melted coconut oil
  • ½ cup chocolate chunks (cut up a chocolate bar)
  • Little sprinkle of salt if you’re feeling frisky
  • If you think the batter is too dry, add 1 Tb water at a time. If you add too much water, let it sit for 10 minutes so the flax can absorb the excess water. 

To make half of the bag, you'll need:

  • 1 very full cup of Beanie Bites mix
  • 1/2 mashed banana or 1/4 cup applesauce
  • 2 heaping Tb peanut butter
  • 2 heaping Tb melted coconut oil
  • 1/4 cup chocolate chunks
  • sea salt 

Instructions:

  1. Preheat oven to 350° F
  2. In a bowl, combine all ingredients and stir until combined
  3. Add chocolate chips
  4. Scoop and press them down a little bit or shape in your hands
  5. Top with 1-2 chocolate chunks and sprinkle with sea salt
  6. Bake for 12-14 minutes

*Important: This mix contains raw chickpeas. Do not eat the dough and please ensure your Beanie Bites creations are thoroughly cooked before consuming.

*You can always add 1-2 Tablespoons of maple sugar or honey if you think you will want your cookies sweeter, but most people think it's great as it is!
