Chickpea Peanut Butter Chocolate Chunk Cookies

To make the whole bag, you'll need:
- 1 bag Beanie Bites
- 1 mashed banana or 1/2 cup applesauce
- 1/3 cup peanut butter
- 1/3 cup melted coconut oil
- ½ cup chocolate chunks (cut up a chocolate bar)
- Little sprinkle of salt if you’re feeling frisky
- If you think the batter is too dry, add 1 Tb water at a time. If you add too much water, let it sit for 10 minutes so the flax can absorb the excess water.
To make half of the bag, you'll need:
- 1 very full cup of Beanie Bites mix
- 1/2 mashed banana or 1/4 cup applesauce
- 2 heaping Tb peanut butter
- 2 heaping Tb melted coconut oil
- 1/4 cup chocolate chunks
- sea salt
Instructions:
- Preheat oven to 350° F
- In a bowl, combine all ingredients and stir until combined
- Add chocolate chips
- Scoop and press them down a little bit or shape in your hands
- Top with 1-2 chocolate chunks and sprinkle with sea salt
- Bake for 12-14 minutes
*Important: This mix contains raw chickpeas. Do not eat the dough and please ensure your Beanie Bites creations are thoroughly cooked before consuming.
*You can always add 1-2 Tablespoons of maple sugar or honey if you think you will want your cookies sweeter, but most people think it's great as it is!
