Greenie Beanie Bites Waffles or Pancakes

Whether you are looking to use up some greens that will go bad soon or you just want an easy way to get your greens, here we've taken the already nutritious elements of Beanie Bites plus added greens! This is also a perfect recipe for St. Patrick's Day! They are great to make ahead for an easy breakfast, and they freeze well if you can't eat them all at once.
Ingredients:
- 1 bag beanie bites
- 3 bananas
- 2 eggs (flax or chia works great!)
- 1/2 cup of milk of your choice, plus 1 tablespoon at a time to your desired consistency for pancakes or waffles
- 1 cup greens (my favorites are spinach or kale! You can also add 1/2 zucchini if you have it)
Directions:
- Grease pan or waffle iron and preheat pan to medium
- Add all ingredients to a blender and blend until smooth
- Cook pancakes until you see bubbles, then flip or cook waffles according to waffle iron instructions
*If you only want to make half, shake the bag because the ingredients settle. Just use 1 or 2 bananas (depending on if you want more banana flavor or not), one egg, and more or less milk depending on how much banana you used.
*batter will thicken as it sits. Add 1 tablespoon of milk at a time to thin appropriately.
