Here's what you need:
- 3 mashed bananas
- 2 eggs (flax or chia works great!)
- 1/2 cup milk of your choice
- 1 bag Beanie Bites mix
- 1/2 cup cacao
- 1/2 cup peanut butter
Instructions:
- Preheat the oven to 350°F.
- In a bowl, mix together the banana, egg, and milk.
- Add the Beanie Bites mix and cacao powder, and stir until well combined.
- Spoon 3 tablespoons of the batter into each muffin cup
- Add 1 teaspoon of peanut butter to each muffin and swirl it into the batter.
- Spoon 3 tablespoons of the batter into each muffin cup
- Add 1 teaspoon of peanut butter to each muffin and swirl it into the batter.
- Top each muffin with the remaining batter.
- Add 1 teaspoon of peanut butter to the top of each muffin and swirl again.
- Bake for 20 minutes, or until a toothpick comes out clean.
*Important: This mix contains raw chickpeas. Do not eat the dough and please ensure your Beanie Bites creations are thoroughly cooked before consuming.
*You can always add 1-2 Tablespoons of maple sugar or honey if you think you will want your muffins sweeter, but most people think it's great as it is!
