Beanie Bites Chocolate Cupcakes Made With Chickpeas and Sweetened with Dates

For my birthday, I made myself some Chocolate Beanie Bites Cupcakes, because your health, especially your gut health, doesn’t care what day it is. More importantly, indulgence doesn’t have to mean junk. You can absolutely still enjoy rich, chocolatey treats that actually support your body, and it doesn't have to be difficult!

These cupcakes are light and decadent. And they're made with real food ingredients that nourish your gut. With Beanie Bites’ all-in-one baking mix, you can whip them up in minutes: no complicated steps, no refined sugar, no empty calories.

The Recipe: Gut-Friendly Chocolate Cupcakes

You’ll need:

  • 1 bag Beanie Bites Chocolate baking mix
  • 1.5 cups unsweetened applesauce (or 3 ripe bananas)
  • 2 eggs (or flax eggs for vegan option)
  • 1/3 cup milk of choice
  • 1/4 cup unrefined liquid sweetener (like maple syrup, date syrup, or honey)
  • 1/2 cup dark chocolate chips (I use Just Date Chocolate Chips)
  • Vanilla frosting – I used Miss Jones Organic Vanilla
  • Optional toppings: chocolate shavings, sprinkles, or leave plain

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine all ingredients until smooth.
  3. For cupcakes: Divide batter into cupcake molds and bake for 20–25 minutes, or until a toothpick comes out clean.
  4. For a cake: pour the batter into a 9x9-inch pan and bake for 28–32 minutes (check at 28).
  5. Let cool completely before frosting. Top with chocolate shavings, sprinkles, or keep them simple.

I made two cupcakes with frosting (because balance!) and turned the rest into mini muffins (without the icing) for everyday snacking that I will put in the freezer!
