Beanie Bites Baking Instructions

To make muffins, bread or waffles, you will need the same ingredients and the first few steps are the same. Pancakes are a bit different. The cookie and the single serve instructions are at the very bottom

Instructions for each are below

  • organic sprouted chickpea waffles

    Waffles

    To make the whole bag, you'll need:

    • 3 medium bananas (mashed) OR 1.5 cups of applesauce
    • 2 eggs or egg replacement (flax or chia egg works great!)
    • 1/2 cup milk of your choice
    • 1-2 Tb maple syrup or honey (optional, only if you want it a bit sweeter)

    To make half of the bag:

    • 1 very full cup of the mix
    • 1.5 bananas or 2/3 cup applesauce (if you only have 1 banana, just use more milk)
    • 1 egg (flax or chia egg works too)
    • 1/4 cup milk
    • 1-2 Tb maple syrup or honey (optional, only if you want it a bit sweeter)

    Instructions:

    1. In a bowl, combine all the wet ingredients.
    2. Stir the wet mixture into the dry Beanie Bites mix until combined. If you believe your mix is too thick, add milk a tablespoon at a time until it reaches the desired consistency.
    3. Add desired mix-ins
    4. Preheat waffle iron and grease (I use coconut oil spray).
    5. Cook waffles according to waffle iron instructions.

    Tips:

    *your batter should be thick but pourable. When you lift a spoon, the batter should flow off. Add more milk 1 Tb at a time until you get the right consistency. This varies mostly because bananas are different sizes. 

    *Important: This mix contains raw chickpeas. Do not eat the dough and please ensure your Beanie Bites creations are thoroughly cooked before consuming.

    *batter will thicken as it sits. Add 1 Tb milk at a time to thin

    Pancakes

    To make the whole bag, you'll need:

    • 1 medium banana (mashed) OR 1/2 cup of applesauce
    • 2 eggs or egg replacement (flax or chia egg works great!)
    • 1.5 cup milk of your choice
    • 1-2 Tb maple syrup or honey (optional, only if you want it a bit sweeter)

    To make half of the bag:

    • 1 very full cup of the mix
    • 1/2 banana or 1/2 cup applesauce
    • 1 egg (flax or chia egg works too)
    • 3/4 cup milk of your choice
    • 1-2 Tb maple syrup or honey (optional, only if you want it a bit sweeter)

    Instructions:

    1. In a bowl, combine all the wet ingredients.
    2. Stir the wet mixture into the dry Beanie Bites mix until just combined.
    3. Add desired mix-ins
    4. Heat a pan to medium and lightly grease if needed.
    5. Pour ¼ cup of batter per pancake into the pan.
    6. Cook until the bottom is golden brown and bubbles form on top (2-3 minutes).
    7. Flip and cook for another 2-3 minutes until set in the middle.

    Tips:

    *your pancake batter should be thick but pourable—like a creamy smoothie. If it feels too thick, simply add 1 tablespoon of milk at a time until it flows easily off a spoon.

    Muffins

    To make the whole bag, you'll need:

    • 1/2 cup milk of your choice
    • 1-2 Tb maple syrup or honey (optional, only if you want it a bit sweeter)

    To make half of the bag:

    • 1 very full cup of the mix
    • 1.5 bananas or 2/3 cup applesauce (if you only have 1 banana, just use more milk)
    • 1 egg
    • 1/4 cup milk
    • 1-2 Tb maple syrup or honey (optional, only if you want it a bit sweeter)

    Instructions:

    1. In a bowl, combine all the wet ingredients.
    2. Stir the wet mixture into the dry Beanie Bites mix until combined
    3. Add desired mix-ins
    4. Preheat oven to 350° F.
    5. Use 1/3 cup of batter to get to 12 muffins.
    6. Pour into muffin pan and bake for 20-30 min until a knife comes out clean.
    7. Let sit for at least 30 minutes - the taste develops the longer you let it sit!

    *pro tip: If you want it to taste like traditional banana bread, extra sweet and a stronger banana flavor, opt for very ripe bananas. If you want a more neutral flavor, use just ripe yellow bananas.

    Breads

    To make 1 loaf:

    • 3 medium bananas (mashed) OR 1.5 cups of applesauce
    • 2 eggs or egg replacement (flax or chia egg works great!)
    • 1/2 cup milk of your choice
    • 1-2 Tb maple syrup or honey (optional, only if you want it a bit sweeter)

    Instructions:

    1. Preheat oven to 350° F.
    2. Mix banana or applesauce, egg and milk
    3. Add Beanie Bites contents and combine until smooth
    4. Add desired mix-ins
    5. Pour batter into a greased pan and bake for 40-60 minutes, or until a knife comes out clean.
    6. Let sit for at least 30 minutes

    *For an extra sweet and more banana flavor, opt for very ripe bananas. As soon as your bananas start to go brown, peel and freeze them so you’ll always have them ready, and never waste a banana again! If you want a more neutral flavor, use just ripe yellow bananas.

  • 1/3 cup melted coconut oil or 1/2 cup almond butter
  • 2 Tb liquid sweetener like date syrup, maple syrup or honey. Can also sub for sugar-free syrup.
  • ½ cup chocolate chips 

To make half of the bag, you'll need:

  • 1/2 mashed banana or 1/4 cup applesauce
  • 2 Tb plus 2 tsp melted coconut oil or 1/4 cup almond butter
  • 1/4 cup chocolate chips 

Instructions:

  1. Preheat oven to 350° F
  2. For best results, blend wet ingredients first, but this is optional.
  3. In a bowl, combine all ingredients until combined
  4. Add chocolate chips
  5. Scoop and press them down a little bit or shape into cookies and flatten.
  6. Bake for 10-14 minutes

Here’s how to make a single-serve Beanie Bite in a mug:

  • 1/3 cup Beanie Bites (heaping)
  • 1/2 banana
  • 2 tbsp milk of your choice

Mix it all together in a mug and microwave for 60–90 seconds. Use a spatula to loosen up the edges and transfer to a plate That’s it! Fluffy, warm, nourishing goodness in under 2 minutes.

This muffin has approximately 220 calories, 10g fiber and 7g protein, and it will keep you satisfied for hours. I added some almond butter and dark chocolate chips (photo above). You can add 1/2 scoop of your favorite protein powder if you want an extra protein boost.
