Ingredients
- 1 bag Beanie Bites Chocolate Chip Cookie Mix
- 1 cup organic sprouted oats (I used One Degree)
- 1/2 cup Unreal dark chocolate peanut butter gems (I used Unreal)
- 1 cup creamy peanut butter (I used Kirkland)
- 1/2 cup date syrup, maple syrup, or honey (I use Just Date date syrup)
- 2/3 cup water
How to Make Chickpea Monster Cookies
Step 1: Mix the wet ingredients
In a large bowl, combine the peanut butter, syrup of choice, and water until smooth.
Step 2: Add the dry ingredients
Pour the Beanie Bites mix, sprouted oats, and chocolate peanut butter gems into the wet ingredients and stir until fully combined.
Step 3: Scoop and flatten
Scoop the dough onto a lined baking sheet. I made mine XL using 1/2 cup scoop, you can make them smaller if you want. Slightly flatten each cookie before baking. I topped each cookie with a few more of the baking gems.
Step 4: Bake
Bake at 350°F for about 12-15 minutes until the bottoms are golden brown.
These were made extra large, so if you make smaller cookies, reduce the bake time slightly.
Step 5: Cool
Let the cookies cool for at least 30 minutes before enjoying. This helps them set perfectly.
Storage Tips
Store cookies in an airtight container for up to 3 days.
For longer storage, freeze the extras and pull one out whenever the Cookie Monster energy strikes. They thaw beautifully and make the perfect quick treat.
