Breakfast Cookie (added-sugar free and oil-free)

Beanie Bites are so versatile, you can use them to make hearty, satisfying treats that are filling enough to replace a meal.
One of my favorites is the Breakfast Cookie. It’s oil-free, added-sugar-free, and absolutely delicious. One full bag of Beanie Bites makes 12 cookies. Each cookie has about 230 calories, 7 grams of fiber (that’s 25% of your daily fiber needs!), and 8 grams of protein. You can even toss in a scoop of protein powder to make them extra filling.
These cookies keep you full and satisfied for hours. You can make a full batch and put them in the freezer so they are perfect for busy mornings or a wholesome snack on the go. Even better for pre or post-workouts!
To make the whole bag, you’ll need:
- 1 bag Beanie Bites Original (Chocolate works the same way)
- 1.5 cups of mashed bananas (about 3) or 1.5 cups applesauce
- ⅔ cup nut butter
- ½ cup dark chocolate chunks or chips (you can also use nuts, raisins, cranberries or whatever other mix-ins call to you)
- A sprinkle of salt, if you’re feeling frisky
If the batter feels a little too wet, let the mixture sit in the fridge for about 10 minutes.
To make half of the bag, use 1 cup of Beanie Bites mix, then split all other ingredients.
Instructions:
- Preheat oven to 350° F
- In a bowl, combine all ingredients and stir until combined
- Add chocolate chips/mix-in
- I like to shape with my hands, but you can scoop and press down
- Top with 1-2 chocolate chunks and sprinkle with sea salt
- Bake for 12-14 minutes or until the bottoms are slightly browned
*Important: This mix contains raw chickpeas. Do not eat the dough and please ensure your Beanie Bites creations are thoroughly cooked before consuming.
*You can always add 1-2 Tablespoons of maple sugar or honey if you think you will want your cookies sweeter. If you use protein powder, add 1 Tb milk at a time until you can combine
