Energy Bites

Beanie Bites has been selling these at the markets for months now, and they are universally beloved. Essentially, there are three great reasons you might want to make these energy bites.

  1. If you somehow have leftover Beanie Bites (which rarely happens 😉), don’t throw them away!
  2. Let’s be real... not every bake is perfect. Maybe you left your Beanie Bites in the oven too long, you tried a new recipe and it didn't turn out well, or you left an ingredient out. Don't throw them away! We can rescue them!
  3. Or #3, these energy bites are so good, you're baking Fresh Beanie Bites just for them.

These energy bites are soft, rich, naturally sweetened, and packed with protein and fiber  and lots of other good stuff. They’re the ultimate zero-waste kitchen win, and they taste like heaven.

Beanie Bites Energy Truffles

Ingredients

  • Around 4 cups (450g) any baked good: waffles, pancakes, muffins, breads, cookies, brownies - it doesn't matter. The ones shown in the photo were leftover carrot cake muffins.
  • 2 tablespoons (40g) date syrup, maple syrup, or honey
  • 2 tablespoons nut butter
  • 1/4 cup unsweetened coconut shreds

Instructions

  1. If you have a mixer, combine all ingredients and let the mixer combine until a soft dough forms. If it feels too dry, add 1 teaspoon syrup at a time, you don't want cracks. If you don't have a mixer, Use your hand or a food processor to break apart your baked goods. Add the syrup and nut butter, combine until a soft dough forms, again if it feels too dry, add 1 teaspoon syrup at a time, you don't want cracks.
  2. Roll into bite-size balls using 1 tablespoon scoop.
  3. Put coconut shreds on a plate and roll your balls in coconut
  4. Chill for 20–30 minutes to firm up.

Store in the fridge for up to one week, 1 month in the freezer.

This recipe will make around 18 balls at about 60 calories, 2g protein and 2g fiber per ball (exact nutrient data will vary depending on what ingredients you're using)
