Ingredients
- 1 bag Beanie Bites baking mix
- 1.5 cups applesauce or mashed banana (about 3 medium-large)
- 2 eggs
- 1/3 cup milk (any milk works)
- 1 cup fresh strawberries, chopped
Instructions
- Preheat oven to 350°F.
- In a large bowl, combine the Beanie Bites mix, applesauce (or mashed banana), eggs, and milk. Stir until fully combined.
- Gently fold in the chopped strawberries. Save a small handful to place on top of the muffins before baking.
- Spoon the batter into a greased or lined muffin tin or silicone mold.
- Add a few pieces of strawberry on top of each muffin.
- Bake for 20–25 minutes, or until a knife inserted in the center comes out clean.
- Let muffins cool slightly before serving.
Storage Tips
Store the muffins in an airtight container on the counter for 2–3 days. If stacking them, place a paper towel between layers to help absorb moisture and keep them from getting soggy.
Freezing: If you won’t eat them within a couple of days, these muffins freeze beautifully. Let them cool completely, then place them in a freezer-safe bag or container and freeze for up to 3 months.
To Reheat: Let a muffin thaw at room temperature or warm it in the microwave for 20–30 seconds, or the toaster oven for 2-3 minutes for a fresh-baked taste.
